Roasted Tomato and Mozzarella


Roasted Tomato Caprese Salad
Yum! This is a great starter for your Memorial Day weekend barbeque. These tomoatoes are roasted in the oven, but why not throw them on the grill? I'm sure they will be just as good if not better. I got the recipe HERE on the Food Network site, it's by Barefoot Contessa, of course.
Ina Garten is definitely one of my favorite chefs.

I absolutely love it!!!!! Then to see these yummies! (I make this all the time with our own basil and tomatoes, but I don't usually roast them... I might have to give it a try!)

We love Caprese salad but I never thought about roasting or grilling the tomatoes. I'll have to try it.

I have a recipe for a hot tomato and mozzarella salad that's really good too. In addition to fresh tomatoes, it also includes sun-dried tomatoes, lots of fresh herbs and a Dijon vinagrette.
